Watermelon Cocktail: Smoke on the Water

This delightful watermelon cocktail by Gretchen Thomas, Wine & Spirits Director for bartaco, uses smoky mezcal (hence the playful name). Be sure to use fresh Florida watermelon, which is sweet and juicy and in season late spring throughout the summer.

You can easily turn this into a large batch punch for a party — just think in terms of parts and taste as you go. If the watermelon is extra sweet, you may want less simple syrup. Not the best melon? You can also add more!

This cocktail is delicious with seafood, or spicy Asian cuisine. And, of course, it’s delicious poolside with some chips and guacamole or smoked fish dip.

Makes 1 Serving

 1 tablespoon chopped watermelon

½ oz. simple syrup

5-7 mint leaves

1 oz. lemon juice

½ oz. mezcal

1 oz. Cappelletti Aperitivo (similar to Campari)

additional watermelon and mint for garnish

In cocktail shaker, muddle watermelon, simple syrup and mint. Add lemon juice and spirits Fill with ice, then shake very well.

DOUBLE STRAIN into ice filled rocks glass. Garnish with 2 cubes of watermelon and sprig of mint.
