Lemon Garlic Mackerel

  • Lay the fillets of fish on a baking tray, which has been covered with foil for easy clean up.
  • Sprinkle with salt and leave for 5-10 minutes. This helps give the flesh a firmer texture but you may omit this step if you prefer.
  • Meanwhile, preheat the oven grill.
  • Mix together the garlic, lemon and some freshly ground black pepper.
  • Pour over the mackerel and then put in the oven to grill for about 5 minutes.
  • If you have some fresh herbs like parsley to hand you could finely chop them and sprinkle them over the fish at this point.
  • Serve with your favourite veggies.

  1. How long do i grill this on an open gas grill?
     
  2. What degree should the oven be set. I.m missing that. Also, my fish is very thick, like 2 inches thick. Can it be sliced in half.

  1. Nice basic recipe. I typically add some fresh ginger, dial down the lemon a little and add a few flakes of red pepper. I also use olive oil I infuse with garlic and ginger. The good thing is you can play with this recipe so it can be a little different each time.
     
  2. I liked the recipe. Very easy to prepare and taste great. Mackerel has strong flavour, so I think there is no need to overdo it and that's what this recipe is all about.

This is a picture of me and my husband in Portugal, climbing up above the clouds with our bikes. Right now we are travelling around the world on our bicycles, so I only pop onto Zaar occasionally, when internet connections and time allow me to. Our trip may take several years so if it's urgent, it's probably better for you to post in the forums ;) Good food is really important to me -- I am happy to pay extra for food that I feel is produced in a sustainable and ethical way and always try to eat using seasonal produce. When we were in the UK we rarely shopped at supermarkets, trying instead to favour small producers, although we were very lucky in that we lived in London and there was lots of choice. We also were fortunate enough to have a weekly organic veg box delivered to our door, filled with so many lovely vegetables for very little money. It really opened my horizons in terms of the variety of vegetables I eat. If you're in the UK, check out Riverford for a box supplier as they're amazing!
