Don't write off flounder as a boring fish — because of its mild flavor, it's extremely versatile and can be used in a variety of dishes, from ceviche to this tasty baked flounder with cheesy breadcrumbs. It's truly one of the best fast fish recipes you can have in your repertoire. When you try it, you're sure to reach for it again and again. 

Once you have your flounder fillets, it's likely you already have the handful of other ingredients needed: Parmesan, breadcrumbs, butter, and olive oil, plus salt and pepper. We do recommend using fresh breadcrumbs for this recipe: To make them, simply cube up whatever bread you have on hand (remove the crust if it's very hard) and pulse in a food processor until coarse crumbs are formed. If you opt to use store-bought dry breadcrumbs instead, you'll likely need only about three-quarters as much to absorb the olive oil and melted butter.

After you season the fish and stir together the crumb topping, the dish requires only 15 minutes in the oven — just enough time to sauté some greens, toss a quick salad, or steam your favorite vegetables.

    Preheat the oven to 425°F. In a large baking dish, season the fish fillets with salt and pepper.
