This Irish Sage combines the very best grass-fed Irish Cheddar with dried sage. The resulting eye-catching cheese has a green, marbled appearance. Irish Sage delivers the creamy tang of a Cheddar with the herby, brothy notes of sage. Traditionally eaten at harvest time, Cheddar blended with sage has been eaten for hundreds of years. The delicate flavour should not be over-powered so, it would best be partnered by a straw-coloured Chardonnay.
