- Use only peas which have just been picked, even if they have been picked the day before preserving, this can affect the taste.
- Shall the peas and blanch them in boiling water for 3-5 minutes, then rinse immediately in cold water.
- Place them into Le Parfait jars and cover with boiling salt water, so that the jars is filled up to 2cm from the top. If you wish you can add a couple of teaspoons of sugar to taste.
- Close and immediately begin the heat treatment for 1 hour 15 minutes at 100˚C.
