1. Pour the Sauternes and the sugar into a jam basin, mix and bring to the boil.
2. From this moment, count the cooking time for this jelly recipe: 10 minutes while stirring.
3. Check the cooking of your wine jelly by pouring a few drops onto a cold plate then tilting the plate. Homemade jam should flow slowly. Skim then proceed without delay to potting. Close them and turn them over for 1 minute, then put them right side up to let them cool.
NB: this jam recipe also works with red wine.
