I spotted a big ole box of Barbara’s shredded wheat the other day at Grocery Outlet, so I figured let’s try it out!

If you haven’t noshed on shredded wheat before, it’s a large biscuity type cereal.

Not sure if you’re supposed to crumble the biscuits up into manageable bites, or just pour your milk over then dig in…

I’ve been going with the pre mush-up method and that’s been working out well enough!

Let me know if you skip the cereal breaking step and just go spoon first.

Anywho.

One of my new favorite vegan YouTubers, Fit Green Mind, whips up shredded wheat porridges regularly.

Her tasty flavor combos inspired me to zhuzh up the rather simple cereal.

The crumbled biscuits thicken up as they absorb your milk/yogurt, forming an overnight oats esque texture.

But a bit more pasty…

It’s not the same same, but the vibes are there.

I’m really selling this one, aren’t I? ha.

Creamy nondairy vanilla protein yogurt, oat milk, fragrant ground cinnamon, and fresh strawberries truly make this breakfast worth looking forward to.

While a perfectly balanced sweet + salty maple peanut butter drizzle is the icing on this cake.

Top her off with nutty toasted walnuts, nutritious hemp hearts, and more juicy berries then you are set my friend!

Much better, right?

P.S. If strawberries aren’t in season, or you have other goodies on hand, feel free to swap in another fruit! Raspberries, blackberries, apples, and pears would all be scrumdiddlyumptious.

P.P.S. Are you a gluten-free individual? Go ahead and use a comparable gf cereal, or even oats. Let the oats soak in your yogurt + milk mixture to soften for an hour or so—raw oats aren’t the easiest to digest.

P.P.P.S. Want a sweeter drizzle? Simply use more maple syrup. Or go the almond butter route if that’s your jam.

P.P.P.P.S. I know this is my second porridgey recipe in a row, but just bear with me peeps. (Pun intended, hehe.)

Strawberry Shredded Wheat Porridge with Maple Peanut Butter Drizzle

Ingredients
  

  • 1 1/2 cups crumbled shredded wheat (I used 2 Barbara's Shredded Wheat biscuits)
  • 3/4 cup nondairy vanilla yogurt (I used Kite Hill Vanilla Protein Yogurt)
  • 1/2 cup original oat milk (I used Oatly)
  • 2 dashes ground cinnamon
  • 1 cup small dice fresh strawberries

Maple Peanut Drizzle

  • 2 tablespoons creamy salted natural peanut butter (no added oil or sugar)
  • 1 teaspoon pure maple syrup, or to taste

Toppings

  • Sliced fresh strawberries
  • Toasted chopped walnuts
  • Hemp hearts

Instructions
 

  • In a medium-sized bowl, mix the crumbled shredded wheat (crumble gently with your hands—leaving some small pieces intact), yogurt, milk, and cinnamon.
  • Allow the mixture to sit for 5 minutes, then fold in the strawberries.
  • Mix together the peanut butter and maple syrup, then drizzle on top of your shredded wheat mixture.
  • Top with sliced strawberries, walnuts, and hemp hearts.
