Batter-fried frog legs are not available just anywhere, and that's perfectly fine with most diners.

But what about true connoisseurs of frog legs? What are they to do?

Not being a native of Frogtown, I never ate frog legs until a trip to Cherry's this week. Not once.

Ordering frog legs was a learning experience. To be specific, I learned they are sold in "saddles." The dinner menu offered portions of six or 10 saddles. Saddles are are two back legs of a frog, still connected, fried up in a nice batter.

No, it did not taste like chicken. It had a mild flavor of fish and the consistency of moist chicken wings. That's pretty much the opposite of the description I always heard.
