• 1/4 cup English peas

• 1 tbsp Shallots

• 1 cup Chicken stock, unsalted

• 1 tsp Vegetable oil

• 3 1/2 tbsp Butter, salted

• 1/4 cup Heavy cream

• 1/4 cup Madeira
