Consommé Royale. About 16 oz of chicken consomme made by grinding up 6 oz skinless chicken thighs with 1 oz of carrots and celery, 2 oz of onion, 3 egg whites, sachet d'espices and cooking with previously made chicken stock. This creates the raft in the stock. Allowed to simmer to filter. Strained. Meaty custard made by mixing 3 egg yolks, 1 whole egg, a tablespoon of heavy cream, and about 6 oz of stock.
