Traditionally, caviar had to be treated with salt to achieve better shelf life of the sturgeon roe. The salt concentration varied depending on the season: in the winter months, caviar was salted less than in summer due to the cooler temperatures (keep in mind: We speak of a time when there was no refrigeration).

In addition to preserving the caviar, salting also affects the flavour and colour of the resulting caviar. As the osmotic properties of salt draw out the liquid from the roe, the resulting kernels become darker and their flavours can be intensified. On the other hand, the use of too much salt can camouflage and suppress the subtle inherent flavour of sturgeon caviar. The restrained use of just the right amout of salt enhances the flavour of the caviar and is known as “malossol”.

Malossol – a quality feature

The word malossol (малосол) comes from Russian and literally means “lightly/lightly salted”. Malossol caviar is therefore not a type of caviar, but refers to sturgeon roe that is only minimally salted and has a salinity of no more than 2.8-4%. This manufacturing method achieves a fine balance between preserving the delicate structure and maintaining the natural flavour of the caviar.
