When spring descends upon the South with its warming glory, simple salads like this one are blessed additions to your dinner menu.

A foundation of crunchy yet tender romaine lettuce shares the spotlight with crisp, peppery radishes and sweet pops of juicy orange segments.

Teamed up with Ginger Carrots and Potato-and-Rutabaga Gratin, this fresh and easy salad is the perfect low-lift side dish to accompany Roasted Lamb with Fresh Herb Sauce

Ingredients

  • 1 (5-oz.) pkg. baby romaine lettuce (10 cups lightly packed)

  • 2 cups orange segments, plus 1 Tbsp. fresh juice (from 3 large oranges), divided

  • 3/4 cup thinly sliced radishes (about 3 oz.)

  • 1 1/2 Tbsp. red wine vinegar

  • 1 tsp. Dijon mustard

  • 1 tsp. honey

  • 5 Tbsp. extra-virgin olive oil

  • 1/4 tsp. kosher salt

  • 1/8 tsp. black pepper

Directions

  1. Gently toss together romaine, orange segments, and radishes in a large bowl. Set salad aside.

  2. Whisk together vinegar, mustard, honey, and remaining fresh orange juice in a small bowl until combined. Gradually whisk in oil until emulsified. Whisk in salt and pepper. Drizzle dressing over salad, gently tossing to combine. Serve immediately.
