How to Turn Breakfast Sausage into Chorizo

You can swiftly transform ordinary breakfast sausage into incredible spicy Mexican chorizo in minutes so simply with garlic and common seasonings you probably have on hand.

Have you ever wanted spicy Mexican chorizo sausage, but only had regular breakfast sausage on hand? I had a hankering for a spicy Mexican breakfast involving chorizo the other day. While I seriously thought I had chorizo in my freezer, I quickly discovered I didn’t. But I DID have some venison breakfast sausage that my dad had given me. And that sparked an idea.


So I took to the internet to help and found a super simple recipe from Daring Gourmet. They used ground pork and pork fat. Alas, I didn’t have any of that. Nor do I want to use fatty pork. Fatty pork happens to be one of the worst things you can eat if you have high cholesterol. So I just adapted it to fit my situation. I probably should have spiced up the full pound of sausage. Because oh man, was it tasty when I was done! Exactly what my taste buds (and sinuses) were craving. Seriously, THE absolute best chorizo I’ve ever had.

What type of sausage to use?

Here’s the super cool thing: you can start from any RAW (uncooked) breakfast sausage (or start from ground meat, like the Daring Gourmet did, but then you’ll need to add salt). I recommend choosing a lean sausage for heart health. But you do you.

However, you MUST use loose sausage. If your sausage is in casings, you’ll need to set it free. If it’s pre-cooked, this recipe will not work.

Also, I’ve heard that vegan sausage is a thing. So I think you could definitely start from vegan breakfast sausage too. I also have dreams of a vegetarian lentil version. (Because lentils rock!)

Keep in mind, if you start with a spicy sausage, you probably need to tone down the heat, so use less chipotle powder.

Now that I have some delicious chorizo on hand, I’m planning on making two incredible meals. One of them has already happened for brunch today. It was Eggs Benedict, Mexican style! Next up: soup. 🙂

How to Make Chorizo from Breakfast Sausage

Ingredients

Scale
  • 1/2 lb. lean (or vegan) loose uncooked breakfast sausage (not in casings)
  • 24 cloves garlic, peeled & chopped
  • 2 teaspoons smoked paprika (or regular paprika … or 1 teaspoon of each)
  • 1 teaspoon chipotle powder (or ancho chile powder or cayenne, adjust up or down to taste)
  • 1 teaspoon dried oregano
  • 1/4 teaspoon cumin
  • 1/4 teaspoon ground coriander
  • A pinch of each: cinnamon and cloves

Instructions

  1. Put the raw sausage in a small mixing bowl and sprinkle with the garlic and seasonings. 
  2. Mix with your hands until the seasonings are fully incorporated.
  3. Form into patties or cook loose, as needed. 

Notes

This sausage freezes well! Form into 1/4 lb. logs and wrap each one tightly with freezer paper. Or put them in a bag and remove as much air as possible before storing in your freezer.

What to Do with Chorizo?

Now that you’ve got an easy recipe to make chorizo, what do you do with it?

  1. Stir a little chorizo into your hash for a spicy beginning to your day.
