This is a quickie, folks, but a yummy quickie, which, as you all know, is the best kind of quickie there is. When my friend, Hyacinth, told me to make these silly little numbers yesterday, I laughed. “You put WHAT? On a WHAT? And top it with a WHAT?” I said this with incredulity in an apparent attempt to pretend that everyday ingredients like Ritz crackers and storebought marshmallows are somehow beneath me. Okay, now THAT’S funny. And when I popped one of these in my mouth and ate it, I also ate my words.

They’re surprisingly delightful. Magically delicious. Creamy, dreamy, and satisfying. And when you have a houseful of kids clamoring for the next big thing in sugar and carbs, they’re the perfect fit. Much, much better than Ding Dongs and Mountain Dew. I think.

To make the little delights, just grab some Ritz crackers, peanut butter, and large marshmallows. Everyone has these lying around the pantry…right? I thought so.

Spread peanut butter on the crackers, top each cracker with a marshmallow, and pop them in the oven under the broiler. How brown/black you want your marshmallows will determine how close to the cooking element you put the cookie sheet.

‘Round these parts, we happen to like our marshmallows nice & toasted.

Me? I prefer a hybrid of golden brown and just-barely-starting-to-blacken.

For me, this one’s a little on the black, mutated side. But Marlboro Man liked it that way.

Doesn’t it remind you of Fourth of July black snakes? I love those things. I like to abandon everyone at our Fourth of July celebration and hunker over in the garage by myself, lighting snake after snake and inhaling the fumes. I think I’ll buy several truckloads of the suckers this year.

Pioneer Woman

P.S. Enjoy the Marguerites!
