Whole Broiled Crispy Trout with Cold Wild Garlic Yogurt

Whole Broiled Trout with Cold Wild Garlic and Coriander Yogurt

Ingredients

For the Fish
  • 1 Whole trout or salmon fillet - washed and pat dry
  • 1-2 Tbspn Extra virgin olive oil 
  • Crunchy sea salt
  • Handful of herbs like chive, parsley and dill 
For the Yogurt
  • 3/4 Cup full fat Greek yogurt
  • 1 Handful fresh coriander ( cilantro)
  • 1 Handful fresh wild garlic ( or one small grated garlic clove)
  • Squeeze of lemon
  • Salt to taste 

Instructions

  1. Preheat grill or broiler to high. 
  2. Line a baking sheet with baking paper. 
  3. Generously coat the fish with the oil and sprinkle the top with crunchy sea salt.
  4.  Place fish on top of baking paper and place it  about 6 inches under the broiler.
  5. Let it sizzle away for 8-12 minutes (depending on fish size). It will flake away perfectly when it is cooked.  
  6. Sprinkle some herbs on top then present it on the table like it's gold.
  7. For the yogurt blitz all of the ingredients - it will have the consistency of cream and froth a bit. Season to taste.  
  8. Serve the crispy hot fish whole and let people tuck into their own pieces. 
  9. Drizzle the cold yogurt on top.
