Warm, hearty and creamy, Potatos Byron is a simple but tasty French potato recipe with Parmesan cheese and cream.

Method

1.Preheat oven to 180°C (160°C fan-forced). Oil four 1-cup (250ml) ovenproof dishes. Pierce skins of potatoes with fork; place on oven tray. Bake about 1 hour or until tender. Cover; cool 10 minutes.
2.Increase oven temperature to 220°C (200°C fan-forced). Split potatoes in half lengthways; scoop flesh into medium bowl, discard potato skins. Mash potato with butter and onions. Divide mashed potato among dishes, smooth tops; do not pack mixture down tightly.
3.Pour cream evenly over dishes; sprinkle with cheese. Bake, in oven, about 5 minutes or until heated through and browned lightly.
