About the Business
Established in 2021. The Colbie's team joined forces to find the answer to a question that has vexed society for years. After multiple late night discussions and a few rounds of arm wrestling, we finally arrived at our definitive conclusion. We know that the chicken comes first. It makes sense. We start with the best birds, the ones might even know calculus. We then introduce them to time-honored Southern-kissed recipes and surround them with comfort food staples like homemade hush puppies, Colbie-style slaw, and handmade floats. Most importantly, we provide this in an environment that genuinely appreciates everyone involved: the guest, the staff, the community. This is the difference between Colbie's and other fast casual concepts. We welcome candidates to our team based on their personality, and we ask that they bring that spirit to our guests. We embrace creativity and encourage everyone to join in our development. When it comes to everything we do, we know that "fast" doesn't have to mean "abrupt."

First time here and I wanted to order almost everything. It was quite an interesting menu. We got a big order and basically did some food sharing, I got the original chicken sandwich. My husband got the vegan chicken sandwich. We also got tater tots, hush puppies, the sweet potatoes fries, chocolate milkshake, spoon bread, peach lemonade, strawberry lemonade, peach salad's and apple bread pudding. I'll have to come back to share my review on the salads and bread pudding. It was too much food lol! Best fast food chicken sandwich around. The chicken was well seasoned, fresh, crispy, on a soft bun. It had just the right amount of pickles and sauce. Well done!!!!
Everything else I tried was also good except the lemonades we didn't like them so I took one star away. Another surprisingly tasty thing was the spoon corn bread. I was actually looking for a place that made that and that's how I stumbled across this spot in the first place. Glad I did! Definitely a must try,Helpful 0Thanks 0Love this 0Oh no 0Business owner information

Food was expensive and didn't taste good at all. Really wish it could have been better but it was a one and done deal for me

We have been wanting to try Colbie's since it opened. Today was the day finally. We ordered the 8 original tenders to share, upgraded it to a combo (medium drink and medium fries) for $4.50 so with the 8 tenders it was $17.45. Then we added an additional medium drink for $3.99. Sadly when you order the 3, 5 or 8 piece tenders they only come with ONE dipping sauce. My husband used his entire dipping sauce on his 4 tenders. They should include at least 2 sauces for the 5 piece and 3 dipping sauces for the 8 piece. Sadly they charged us 50 cents a piece for extra dipping sauces. I felt nickel and dimed by this cheapness. I did say forget the second sauce but he included it any way for the extra charge (I found out when I looked at my receipt). I thought he was being nice but not the case. We ordered the Nashville Hot Sauce and the Southern BBQ Sauce. Both were tasty.
The chicken tenders were very delicious. They were hot and crispy. They stayed hot until the very last of the chicken tenders was eaten. The tenders were a nice size. The fries were crinkle cut. They were tasty but they were only warm when we got them and quickly turned cold.
We enjoyed our meal at one of their outside tables. There was a nice breeze and it was very enjoyable to sit there and enjoy our meal.Helpful 1Thanks 0Love this 1Oh no 1Business owner information

I used to love this place. But the past few times I have went it has gotten worse and worse. I don't know what they did to their waffles but this is just not it. I would never call this a waffle. They aren't serving anything in boxes . There is no logo on any of the bags. They are charging extra for sauces now. I'm guessing it's all an effort to cut costs because they aren't doing well, but serving this quality of food surely is not going to help. Not sure I'll be back again , but I hope they can turn things around.

Thank you for the review and feedback Joseph. We are glad you enjoy the Waffler and we will use the rest of the information to make improvements. Hope to see you again!
Jan 3, 2022Previous reviewI really like this place. I have been frequenting it pretty regularly since it opened. The Waffler is the best item on the menu. I highly recommend. They have some great sauces as well -- definitely get the bourbon sauce with your fries -- you can thank me later. Overall most things I have had have been great, but the menu is huge so there are bound to be a few exceptions. My biggest complaint is their grilled chicken. They give you the option to get it on all their sandwiches instead of fried. I decided to be "healthy" one day and get the grilled chicken on the Waffler. No one informed me the grilled chicken was drenched in Italian dressing. So I had two waffles with an Italian dressing chicken and syrup all over. It was disgusting! I really just wish they had plain grilled chicken. I also don't recommend the biscuits and gravy -- they are not going to be what you expect. My other complaint is their menu is difficult to read. Terrible font and way to many words. They could get creative and it make it much simpler and more visual appealing.
Definitely go for the Waffler -- it's worth the trip! - Aug 30, 2021
MOUNT HOLLY: the newest fast casual food chain to come to NJ, Colbie's Southern Kissed Chicken - Mount Holly, NJ specializes in comfort southern food including breaded chicken, biscuits, waffles, sweet tea, and so much more! They even have a vegan chicken sandwich which was Brie's mommy's main reason for visiting. We were thrilled to find out that their outdoor patio is dog friendly!
You can have a friend go inside to order, or go through the drive through, or order online for curbside pickup! Then enjoy it outside at their umbrella-covered tables. The menu is huge and the quality is good! If you're an early bird, breakfast is waiting for you and they open at 7am during the week and 8am on weekends!Helpful 3Thanks 0Love this 3Oh no 0Business owner information

While passing by on Rt 38 this place caught my eye, shiny and new in a large building. This area of south Jersey has a bit of a boring food scene, so I was intrigued by the newcomer.
The entire time that elapsed from getting in the drive through line to getting my food was about 25 minutes. Apparently they are working on their timing, so if they can get it to under 15 I would be satisfied.
I enjoyed all the food I got here. The chicken tenders I got were very juicy but not very crunchy, however I liked them quite a bit. My husband got the Nashville hot sandwich, and he said it was good but was not spicy at all. Their cheese curds and hush puppies were both tasty as well, I would order both again.
Overall this is a decent chicken shop and definitely unique in the area. I would eat here again.Helpful 13Thanks 0Love this 8Oh no 0Business owner information

I went here because of the hoopla and praise that was occurring. I'd pass by the restaurant and see the lines onto the highway however I was highly disappointed.
I ordered their fame Nashville hot chicken sandwich. Competitive price but severely lacking in flavor. I can only describe the taste as eating a elk cooked fried chicken breast with a hint of frank hot sauce flavor. Nothing unique about the taste for me.
Moreover there was so much breading that it made it difficult to eat. The bread was also burned and not edible. I unfortunately ended up throwing most of it away. The fries were decent but nothing memorable. The salad which I ordered was also just okay.
I can't speak to the dining experience as I ordered through drive through. Everyone was pleasant and of course because it's newly built, everything was very clean.
I really wanted to like this place because with so many chain restaurants pushing their chicken sandwiches, I was hoping this independent would have something different from the rest. Unfortunately it disappointed.Helpful 5Thanks 0Love this 0Oh no 1Business owner information

Hi CJ, thank you for the feedback. We’re sorry that not everything was satisfactory and we left you a bit disappointed. We will take all this into consideration as we are still working through some opening growing pains. We hope you will be able to give us another chance in the future.

First opening weekend and it's an hour and a half wait at the drive thru. Honestly I have no idea why they're not opening the dining room now or taking orders inside but it's forgivable in this day and age.
Ultimately what matters is was the food worth the wait?
Ummmm... yeah.
Not only is it worth the wait, it's reasonably priced on top of it all. What a concept!
The chicken is really good and tender here. I got the chicken and waffles, and the waffle with the spicy syrup might become an obsession now. I tried the green bean fries as well. Found them pretty tasty.
I drove an hour to try it. I'm not sure I'll get back here. But I'll say that I hope they open a second one in Delco.
And if there is a next time, I hope I get to meet Ryan Howard.

And now I'm adding this paragraph three hours later. Because I brought home the Peanut Butter Spoon Pie and Apple Spoon Pie to taste later.

Colbies has gone down hill. I used to go there a lot and it was always really good but recently I started going there again and the frizzled onions on one of the sandwiches was stale and it wasn't that big of a deal but the next time they were even more stale. I don't know why I went back there after but then there was mold on the bun after I bit into it. I gave them a last chance yesterday and the cheese wasn't even melted and the last 24 hours my stomach has been hurting, nothing crazy but enough to make me make sure everyone I know doesn't go there. Eat this Colbies. I'm gonna post on google too my last one got 30k views
