This brilliant batter is easier, tastier, and healthier than most. If you want to go full-out Mediterranean with the chickpea flavor, throw in a bit of cumin and smoked paprika as well. Deliciously spiced batter for frying veggies.

1/2 cup water, or as needed

Place the flour in a shallow bowl. Slowly whisk in the water to make a batter. Let the mixture sit for 15-30 minutes. Stir the batter and add additional water as needed. Add seasonings as desired.
