ℹ️ PLANT INFO:
Small size: Fits through a 1" square but not a ½" square
Medium size: Fits through a 2" square but not a 1" square
Large size: Does not fit through a 2" square

Sunchokes are an edible tuberous sunflower native to North America. Very easy to grow and tend to be prolific. Can be eaten roasted, pureed, grated, or fermented into pickles. I have personally found that the taste and texture across all varieties is the same. Here's a brief rundown of each variety I offer:

White Fuseau: Large long white-brown tubers. Not knobby, easy to clean. Medium yield. Tall plants 8-10ft
Red Fuseau: Medium purple-red-bronze tubers less knobby than others but more than White Fuseau. Medium-high yield
Aurora: Medium-large pink-rose tubers. Medium-high yield. Tall plants 8-10ft
Stampede: Large bright white-cream tubers, very knobby. Highest yielding variety. Very tall plants 10-12ft
Beaver Valley Purple: Medium-small purple-beige tubers. Easy to clean, not knobby, football shaped. High yield. Medium height plants (6-8ft)
Pink Crispy: Large pink/red long slender sprawling tubers. Easy to clean, not knobby. Medium yield. Flowers profusely and late. Plants medium height (6-8ft). A chance wild cross originally sourced from Oikos Tree Crops
Mulles Rose: Medium white-cream tubers with rose colored ends. Easy to clean, not knobby. Unknown height and yield, need to grow another season
Supernova: Medium white-cream tubers. Not as knobby as Stampede. Compact short stolon tubers (close to plant). Medium yield. Shorter height 4-6ft. A selection from Oikos Tree Crops
