The Burgundy Truffle

Tuber Uncinatum

The Burgundy Truffle, also known by it’s latin classification "Tuber Uncinatum", is an autumn truffle. From mid Septeber to late January, these treasures are harvested across the woodlands of Burgundy, with the help of a dog, who sniffs out it’s aroma from beneath the ground, and the weather, who allows the truffle to grow in a perfect balance of darkness and humidity. ​

The harvest of the truffle is also known as​ the hunt. We work alongside​ Lagoto Romagnolo dogs to help us detect where these treasures are hiding. The dog marks the placement, and then it’s up to the master to delicately unearth the truffle without damaging it’s form, using a dedicated set of tools and, of course, skill.

Tuber Uncinatum is a mushroom dense dense and rich in odeurs. Her hazelnutty, earthy scent is incomparable.

We decided to name our enterprise  "L'Or des Valois"  because the truffle from our region was the first to find its place on the table of kings. Yet by the beginning of the 20th century, the Burgundy Truffle was largely forgotten by the outside world, as the Black Truffle/Perigord Truffle became the fashion.

Since 2003, l’Or des Valois has dedicated our work to growing the truffle industry in Burgundy and beyond. Our goal is to share our passion for local cuisine, savoir-faire, and traditions, while ensuring a sustainable and thoughtful promotion for the future.

Working with Burgundy-based artisans to produce our ​ regional products , sourcing and supplying fresh truffles for restaurateurs, and offering visitors a chance to discover the world of the truffle through ​ immersive experiences has allowed us to showcase this exceptional local delicacy. We are grateful and proud to share this passion with our guests from all over the world. ​

White Truffle​

Tuber Magnatum

A unique and rich flavour tinted with the bite of wild garlic, the prized White Truffle is best consumed raw and with attention to quantity. A remarkable tasting experience from the first slice, it has the power to transform even a simple pasta dish into a gastronomic experience. ​

Arriving straight from Italy’s Alba region in Piémont, the season of the white truffle begins in August and continues until late December. An unmissable ingredient for Michelin star chefs and foodies alike, with an unforgettable flavour. . 

Black Truffle​

Our selection of fresh truffles would not be complete without France’s most famous variety… the black diamond, the Perigord Truffle. A slightly stronger flavor, mixed with earthy accords, easier to taste than to describe, the black truffle is a star sure to brighten your end of year festivities.

Bianchetto Truffle​

Tuber Borchii

Also known as the little sister of the celebrated white truffle from Alba, the Bianchetto’s slightly garlicky flavour comes alive when mixed with butter.

It’s small size and affordability make the Bianchetto truffle an ideal medium through which to experiment with new flavours and recipes.


Summer Truffle​

Summer Truffles, or Saint Jean Truffles, can be unearthed across France and Europe, with a characteristically lighter and more delicate aroma when compared to other truffle varieties.

In essence, the summer truffle is well suited to its season as the finishing touch to your summer dishes. Try adding a few shavings to a salad or burrata to elevate your meals.
