In the late 19th century unscrupulous Chicago manufacturers used animal fat, a waste product from abbatoirs, to produce a a substance called butterine which was advertised as a butter substitute. Author Upton Sinclair's 1905 novel The Jungle helped expose the practice. In 1906 Congress stepped in with the Federal Meat Inspection Act.
